Ingredients:
1 bunch fresh kale, washed and chopped (center rib removed)
2 tablespoons olive oil
2 cloves garlic, minced
1/4 cup dried cherries, chopped (optional)
2 tablespoons Cherrywood Cherry Mustard Marinade
1 tablespoon soy sauce
1 tablespoon honey
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
Instructions:
1. In a small bowl, mix together Cherrywood Cherry Mustard Marinade, soy sauce, honey, and red pepper flakes.
2. Heat the olive oil in a large sauté pan over medium heat. Add the minced garlic and dried cherries, sautéing for 2 minutes until the garlic is fragrant and the cherries plump up.
3. Increase the heat to medium-high and add the chopped kale to the pan. Stir-fry for 4-5 minutes until wilted and vibrant green.
4. Pour, whisked bowl mixture sauce over the sautéed kale, ensuring even coating. Reduce the heat to low and cook for an additional 2-3 minutes to blend the flavors.
5. Season with salt and black pepper to taste. Give it a final stir.
6. Remove from heat and transfer to a serving dish.
7. Serve as a side with your favorite protein or as a light and healthy main course.

Salmon is a nutritional powerhouse, rich in omega-3 fatty acids that support heart and brain health. Combined with the antioxidant-packed cherries, this delectable dish offers the perfect balance of nourishment and indulgence.
Ingredients:
4 salmon fillets, preferably leave skin on
(about 6 ounces each)
2 tablespoons soy sauce
1/4 cup Cherrywood Cherry Mustard Marinade
1 tablespoon olive oil
Salt and black pepper to taste
Fresh parsley for garnish (optional)
Instructions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with avocado oil. If you prefer to grill as we do at Cherrywood Orchard; preheat your grill, prep a double piece of heavy duty aluminum foil near your salmon.
2. In a small bowl, combine the oil, Cherrywood Cherry Mustard Marinade, and soy sauce, set aside.
3. Season the salmon fillets with salt and black pepper to taste.
Grilling Method:
1. Place salmon on doubled aluminum foil, skin up. Pinch corners of aluminum foil to create a rimmed grill pan. Whisk ingredients in the bowl and carefully pour over the salmon. Raise the salmon pieces and move around to coat all sides. loosly cover and marinate for 20 minutes.
2. Pre-heat grill.
3. Flip salmon skin side down before placing foiled packet on grill. Grill for approx 10-20 minutes until desired doneless is reached.
Stove/Oven Method:
Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin side down, and cook until golden brown, about 3-4 minutes. Flip the fillets and cook for another 2 minutes.
4. Transfer the partially cooked salmon fillets onto the prepared baking sheet, skin side down. Brush the cherry glaze generously over the top of each fillet.
5. Place the baking sheet with the salmon in the preheated oven and bake for about 6-8 minutes, or until the salmon is cooked through and flakes easily with a fork.
6. Remove the salmon from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley if desired.

Ingredients:
1 pork tenderloin (about 1 lb)
Salt and black pepper, to season
1 tablespoon olive oil
Cherry Glaze:
1/4 cup Cherry Mustard Marinade
1/4 cup honey
1 clove garlic, minced
1 teaspoon cornstarch (optional, for thickening)
fresh parsley or microgreens for garnish
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Season the pork tenderloin with salt and black pepper, ensuring it is evenly coated.
3. Heat olive oil in an ovenproof skillet over medium-high heat. Add the tenderloin and sear it on all sides until browned. This will lock in the juices and add flavor. This process should take around 5 minutes.
4. While the pork is searing, prepare the cherry glaze. In a small bowl combine the Cherry Mustard Marinade, honey, and minced garlic. Bring the mixture to a simmer over medium heat.
5. If you prefer a thicker glaze, you can heat cherry mixture in a small saucepan. If you prefer a thicker glaze…add cornstarch with a small amount of water to create a slurry. Add the slurry to the simmering cherry glaze, stirring well. Cook for an additional 1-2 minutes until it thickens to your desired consistency.
6. Remove the seared pork tenderloin from the skillet and place it on a baking sheet or in an ovenproof dish. Pour half of the cherry glaze over the pork, ensuring it is evenly coated.
7. Place the pork tenderloin in the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Cooking times may vary depending on the thickness of the tenderloin, so it's advisable to use a meat thermometer to check for doneness.
8. Once the pork is cooked through, remove it from the oven and let it rest for a few minutes.
9. Before serving, pour the remaining cherry glaze over the pork tenderloin or use it as a dipping sauce. The glaze will add a sweet and tangy flavor that perfectly compliments the juicy pork.
